I’m excited to be back to teaching this three day immersive, hands-on class we used to hold at Pholia Farm. Karin (kuh-rin) Eide owner and cheesemaker of Spring Hill Farmstead Goat Cheese is hosting the small class at her dairy and creamery. In addition to three days of artisan, science backed cheesemaking instruction, the rare opportunity for a private tour of world famous Cypress Grove Chevre is this close to being booked. Not only that from the site you can easily:

- Hang out on a beautiful California beach
- Shop and dine in Old Town Eureka known for it’s Victorian architecture

During the class we’ll take a deep dive into building intuition through understanding cheesemaking chemistry and milk. We’ll be working with more than one type of milk, talking about species and seasonal differences and how you as a cheesemaker can learn to read and anticipate these challenges. We’ll making feta (in simultaneous batches from different milks), pasta filata cheeses, two type of bloomy rinds, and more. Karin will be giving a tour of her creamery (the classes will be inside the farmhouse) and offering each student the opportunity to attend one of the milking sessions. If you are considering ever starting your own licensed dairy, this is a fantastic chance to see how it can be done on a small-scale (in one of the most regulated states in the US). There’s also the opportunity to stay on the farm for a fully immersive experience.
